This is best when the cheese is more mature; simply give the cheese a gentle squeeze and if it has some ‘give’ its about right.
Place in a small round dish, score the top and bake for approx 15mins. (this depends on how mature the cheese is, if its not very mature it might need a little longer)
You can try studding the cheese with garlic cloves and rosemary for more flavour. Serve with crusty bread.
