Our Little Burtles are made from a (predominantly) lactic set curd, the milk is cultured overnight and the following day the curds are gently ladled into cheese cloth where they are again left to drain overnight. The soft curds are then mixed with a little salt and garlic before being shaped and rolled in toasted black pepper.
They are then transferred to the maturing rooms allowed to age. As they age they become harder and drier. The result is a little ‘nugget’ of cheese, the ‘younger’ cheese will crumble beautifully over any dish to add amazing flavour. If left for a couple of weeks, it will be harder and can then ‘shaved’ or ‘grated’.
